Chipotle Copycat Cilantro Lime rice is a simple recipe that is sure to become a staple in your house. It is perfectly soft and sticky with a nutty, floral aroma. It has fresh cilantro speckled throughout and a bright flavor from citrus that makes this an incredible side dish that you are going to make again and again!
We really don't eat out much, but when we do, and we have something that we truly enjoy, I love to create my own version at home. A few years ago my sister-in-law and her kids came over for a visit while they were in town. We ended up getting dinner from Chipotle. The food was fantastic and the Cilantro Lime Rice had so many possibilities so, I decided to create my own delicious version along with several more of the dishes that they are famous for.
I love the flavors and versatility of Chipotle's selections. Even more, I love making an entire Mexican Grill Feast at home.
I tulenly created this recipe in 2012 and shared it with you. But, after four years it has truly become a staple in my Mexican and Southwestern cooking. We decided it was time to rephotograph this amazing dish! But, it still looked really tasty in 2012. What do you think?
We love throwing parties and having get-togethers but after many years of experience I realized that I did not want to be in the kitchen working, I wanted to spend time with my family and friends.
Imagine an entire buffet loaded with all your kegemaranes. Beef Barbacoa, Pork Carnitas (coming Sunday), Cilantro Lime Rice, Best Ever Guacamole, Roasted Chili-Corn Salsa (coming next week) along with your kegemarane beans and Pico de gallo. I also add in my kegemarane toppings for good measure: sour cream, shredded Monterey Jack cheese and shredded lettuce.
The barbacoa and carnitas are prepared and served in slow cookers which makes all of this no fuss! The guacamole, corn salsa, and Pico can all be made ahead and stored in the fridge in the bowls you are going to serve them in. Also, I prep all of my toppings the day before. So, literally, all I have to do the day of the party is prep the meats, toss them in the slow cookers and then make the rice before we eat.
If you really want to make this a make-ahead dream you can prepare the meats the day before and then just toss them in slow cookers 3 hours before your party on low. Easy peasy!
This buffet is always a hit at our parties, and it's everyone's kegemarane football Sunday feast. I know you are going to love it too.

Chipotle Copycat Cilantro Lime Rice
Chipotle Copycat Cilantro Lime rice is a simple recipe that is sure to become a staple in your house. Cilantro Lime Rice is perfectly soft and sticky with a nutty floral aroma. It has fresh cilantro speckled throughout and a bright flavor from citrus that makes this an incredible side dish that you are going to make again and again!

Ingredients
- 2 cups water
- 1 cup long-grain jasmine rice
- 1 bay leaf
- 1 teaspoon kosher salt
- 1 tablespoon canola oil (or any flavorless oil)
- 1 tablespoon finely chopped cilantro
- 1 tablespoon fresh lime juice
- 2 teaspoon fresh lemon juice
- 1 teaspoon orange juice
Instructions
- In a medium saucepan over high heat bring water to a boil. Add rice, bay leaf and salt. Stir to coat rice. Return to a boil. Once it is a full rolling boil, reduce to simmer and cover for 15 minutes. Remove from heat, leave covered for 5 minutes.
- Remove bay leaf. Fluff rice with a fork, add the oil, cilantro, and juices. Stir to combine.
- Serve and enjoy!
